Tater Tot Burritos (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil
02 - 8 large eggs, whisked lightly
03 - Kosher salt and black pepper, to taste
04 - 2 cups frozen tater tots
05 - ⅓ cup half-and-half cream
06 - 8 breakfast sausage links, casings removed

→ Toppings & Assembly

07 - 2 Roma tomatoes, chopped into small pieces
08 - ¼ cup fresh cilantro, chopped
09 - 1 (16-ounce) can refried beans
10 - 1 cup shredded Monterey Jack cheese
11 - 1 cup shredded cheddar cheese
12 - 8 flour tortillas, 8-inch size

# Instructions:

01 - Set your oven to 400°F. Cook the tater tots for 20-25 minutes until golden and crispy on the outside.
02 - Warm up olive oil in a skillet over medium heat. Break up the sausage, cook it for about 3-5 minutes till browned, and keep a tablespoon of the drippings in the pan.
03 - Using the same pan, pour in the eggs and stir over medium heat. Add the half-and-half once they start setting. Sprinkle salt and pepper. Take 3-5 minutes to cook to a creamy consistency.
04 - Spread some refried beans over each tortilla. Add layers with crispy tater tots, the cooked sausage, eggs, both kinds of cheese, cilantro, and tomatoes. Fold the sides and roll everything up snugly.
05 - Place the burritos seam-side down on a baking tray. Bake them for 12-15 minutes till the filling is hot and the cheese has melted.

01 - Wrap individually in foil or plastic wrap to freeze for up to 3 months.
02 - Reheating tip: Microwave frozen burritos for 1-2 minutes per side, then crisp up in the oven or skillet if you'd like.
