Blueberry Cream Cheese Bites (Print Version)

# Ingredients:

→ Cookie Base

01 - 1/2 cup soft unsalted butter
02 - 1/2 cup white sugar
03 - 1/4 cup tightly packed brown sugar
04 - 1 big egg
05 - 1 teaspoon pure vanilla
06 - 1 1/4 cups regular flour
07 - 1/2 teaspoon baking soda
08 - 1/4 teaspoon salt

→ Cheesecake Filling

09 - 4 oz softened cream cheese
10 - 1/4 cup white sugar
11 - 1/2 teaspoon pure vanilla

→ Blueberry Swirl

12 - 1/2 cup blueberries, fresh or frozen
13 - 2 tablespoons white sugar
14 - 1 teaspoon cornstarch
15 - 1 tablespoon water

# Instructions:

01 - Mix blueberries, sugar, cornstarch and water in a pan over medium heat till thick, roughly 5 minutes. Lightly crush berries and let cool.
02 - Whip cream cheese with sugar and vanilla until it's totally smooth.
03 - Blend butter with sugars, then add egg and vanilla. Mix dry stuff separately, then stir everything together for a soft dough.
04 - Create small dents in 2-tablespoon balls of dough. Add cheesecake mix and berry sauce, then swirl them together.
05 - Pop in a 350°F oven for 12-15 minutes till the edges firm up. Let them sit 5 minutes on the tray, then move to a cooling rack.

01 - Try using strawberry or raspberry jam instead of blueberries
02 - Keep in the fridge for up to 5 days
03 - Best enjoyed when they're not cold
