Peas & Greens Dish (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 big ham bone with meat chunks still attached
02 - 16 ounces dry black eyed peas
03 - 2 - 3 cups cut-up collard greens
04 - 3/4 cup wild rice

→ Aromatics & Liquids

05 - 1/2 big sweet onion, chopped
06 - 3 cloves garlic, finely chopped
07 - 64 ounces chicken broth
08 - 8 ounces tomato sauce
09 - 1 tablespoon apple cider vinegar

→ Seasonings

10 - 1 teaspoon salt or Cajun mix
11 - 2 teaspoons garlic powder
12 - 2 teaspoons onion powder
13 - 1/2 teaspoon cayenne pepper
14 - 1/2 teaspoon black pepper

# Instructions:

01 - Empty your black eyed peas into a big strainer and wash with cold water. Toss out any beans that look weird or any random stuff mixed in.
02 - Put your ham bone in the slow cooker with the chopped onion, chopped garlic, chicken broth, spices, vinegar and tomato sauce. Give it a quick stir before you throw in the black eyed peas and greens.
03 - Put the lid on and let it cook on High for 2 hours, then mix in the wild rice.
04 - Put the lid back on and switch to Low for another 4 hours.
05 - Gently take out the ham bone and cut off any meat still stuck to it. Toss the meat back in, stir it up, and cook on Low for another 30 minutes to an hour. Before you serve, skim the fatty stuff off the top.
