Baked Spinach Quesadillas (Print Version)

# Ingredients:

→ Vegetables

01 - 1 cup sliced mushrooms
02 - 2 cups chopped fresh spinach

→ Base

03 - 1 cup cheese, shredded
04 - 4 large tortillas (flour-based)

→ Seasonings

05 - 1/4 teaspoon optional dried thyme
06 - Oil spray or olive oil for brushing
07 - 1 tablespoon olive oil
08 - Salt and pepper as needed
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon onion powder

# Instructions:

01 - Drop the mushrooms in a hot pan for 5 minutes, then toss in spinach. Sprinkle on your spices as it all softens.
02 - Pile on the cheese and cooked veggies onto one side of each tortilla. Flip the empty side over to close.
03 - Brush oil lightly on the outside and pop them in a 400°F oven. In 10-12 minutes, they'll be golden and crisp.
