Pear Goat Cheese Arugula Mix (Print Version)

# Ingredients:

→ Tangy Dressing

01 - Light olive oil (⅓ cup)
02 - Dark balsamic vinegar (3 tablespoons)
03 - Smooth Dijon mustard (1 tablespoon)
04 - Fresh garlic clove (1, crushed or chopped fine)
05 - Table salt (¼ teaspoon)
06 - Ground black pepper (⅛ teaspoon, fresh)

→ Main Components

07 - Fresh arugula leaves (5 ounces)
08 - Thinly cut red onion (½ small)
09 - Ripe pears (3, whatever kind you like)

→ Garnishes

10 - Soft goat cheese (4-5 ounces)
11 - Sweet dried cranberries (1 cup)
12 - Crunchy pecans (½ cup, lightly toasted and fully cooled)

# Instructions:

01 - If you want milder onions, dump them in ice water for 10 minutes, then pat dry with towels
02 - Put all dressing stuff in a jar and give it a good shake until mixed
03 - Put arugula in your big bowl first, then scatter pears and onions on top
04 - Drop little bits of goat cheese all over, then add cranberries and pecans
05 - Shake your dressing one more time and pour it over everything right when you're ready to eat

# Notes:

01 - Try it with sliced apples if you don't have pears
02 - Fresh pomegranate seeds work great instead of cranberries
03 - Switch up the nuts - walnuts, almonds or pine nuts are all tasty options
04 - Try other cheeses like feta, blue cheese or shaved parmesan if you want
