Tender Beef Roast (Print Version)

# Ingredients:

01 - 4-4.5 pound middle section beef tenderloin, cleaned and string-tied.
02 - 2 teaspoons coarse kosher salt.
03 - 1 teaspoon coarsely crushed black pepper.
04 - 2 tablespoons avocado cooking oil.
05 - 6 tablespoons room temperature butter.
06 - 6 cloves of garlic, finely diced.
07 - 1 teaspoon chopped fresh rosemary.
08 - 1 teaspoon chopped fresh thyme leaves.

# Instructions:

01 - Let beef sit out for 1-2 hours until it reaches room temp. Combine the soft butter with diced garlic and chopped herbs.
02 - Get your oven hot at 425°F. Wipe meat dry with paper towels, then rub with salt and pepper.
03 - Get all sides of the tenderloin golden brown in hot oil, taking about 10 minutes altogether.
04 - Coat the top of your beef with the herby butter mix.
05 - Pop it in the oven for 15-20 minutes until it hits your preferred doneness.
06 - Give it 10-15 minutes to rest before cutting off the twine and slicing it up.
