Candied Sweet Potatoes (Print Version)

# Ingredients:

01 - 3 to 4 pounds of medium-sized sweet potatoes (about 5 or 6).
02 - Half a teaspoon of salt.
03 - 1/2 stick unsalted butter (about 1/2 cup).
04 - One spoonful of water.
05 - 1/4 cup of real maple syrup.
06 - Packed brown sugar—1 cup.
07 - A pinch over 3/4 teaspoon cinnamon.
08 - Ground nutmeg—1/2 teaspoon.
09 - Ginger powder—1/2 teaspoon.
10 - Vanilla extract—1 teaspoon.
11 - Optional: Zest of an orange (2 teaspoons).
12 - Optional garnishes: sprigs of rosemary, flaked sea salt.

# Instructions:

01 - Remove the skin, then cut into slices about half an inch thick. Grease a 9x13 pan and toss in some salt with the slices.
02 - In a saucepan, combine butter, water, syrup, and sugar. Toss in the spices, then boil without stirring for 2 minutes. Stir in vanilla and zest (if you're using).
03 - Pour the sauce over the potatoes. Bake for around 60 minutes, stirring every 20 minutes. Cover after the first 20 minutes. Let it rest uncovered for about 10 minutes after baking.
