Spiced Coffee Oat Treats (Print Version)

# Ingredients:

01 - Regular whole rolled oats (2 cups/170g).
02 - Plain flour (1 2/3 cups/210g).
03 - Coffee powder (2 teaspoons).
04 - Baking soda (1 teaspoon).
05 - Salt (1/4 teaspoon).
06 - Powdered ginger (1 teaspoon).
07 - Ground cinnamon (1 teaspoon).
08 - Grated nutmeg (1/4 teaspoon).
09 - Ground cloves (1/8 teaspoon).
10 - Room temperature unsalted butter (3/4 cup/170g).
11 - Packed brown sugar, any shade (1 cup/200g).
12 - White sugar (1/4 cup/50g).
13 - One large egg at room temp.
14 - Regular or dark molasses (1/4 cup/75g).
15 - Chopped white chocolate (8 ounces/226g).
16 - Veggie oil or coconut oil (1 teaspoon).
17 - Coffee powder for garnish (1/2 teaspoon).
18 - Nutmeg and cinnamon for dusting.

# Instructions:

01 - Give oats about 10-12 quick pulses in your food processor until you get different textures with some powdery bits.
02 - In a medium bowl, stir together the processed oats, flour, coffee powder, baking soda, salt, and all your spices.
03 - Using medium-high speed, mix butter with both sugars for about 2 minutes till fluffy. Then add your egg and molasses and beat another minute.
04 - On low speed, gradually add your dry mix into the wet ingredients. Let the dough cool in fridge for 30-45 minutes.
05 - Form 1.5 tablespoon balls of dough and put them 3 inches from each other. Cook at 350°F until the edges turn light brown, about 12-13 minutes.
06 - Mix melted white chocolate with oil and coffee powder. Once cookies are cool, dip half of each cookie and add a sprinkle of spices. Chill in fridge until set.

# Notes:

01 - Go for white chocolate bars instead of chips for smoother melting.
02 - You can make the dough up to 3 days ahead and keep it in the fridge.
03 - Stay away from blackstrap molasses for this recipe.
