Creamy Tortellini Sausage Soup (Print Version)

# Ingredients:

01 - 1 pound fresh Italian sausage.
02 - Half a medium onion, diced.
03 - 4 cloves of garlic, minced finely.
04 - 2 medium carrots, cut into rounds.
05 - 2 celery sticks, chopped small.
06 - 1 large can (28 oz) of crushed tomatoes.
07 - 1 medium can (14 oz) diced tomatoes, juices included.
08 - 4 cups of chicken stock.
09 - Two packs (9 oz each) cheese tortellini from the fridge.
10 - 3/4 cup of heavy whipping cream (optional addition).
11 - 2 handfuls of fresh baby spinach leaves.
12 - Season with some salt and black pepper.

# Instructions:

01 - Cook onions with sausage for about 7-8 minutes. Break the sausage apart while it cooks. Drain grease if needed. Toss in the garlic for 30 seconds.
02 - Move the sausage mix into your slow cooker. Add in the carrots, celery, both cans of tomatoes, and the chicken stock.
03 - LOW: Leave it 7-8 hours. HIGH: 4-5 hours works too.
04 - Half an hour before eating, add tortellini, cream, and spinach. Set to HIGH. Stir a few times. Add salt or pepper as needed.

# Notes:

01 - For faster cooking, cut carrots into smaller bits.
02 - You can use sausage out of casings or ground.
03 - Spicy sausage is a good option if you like heat.
04 - Leftovers soak up liquid, so add more broth when reheating.
05 - Best enjoyed freshly made.
