Parmesan Chicken Bowl (Print Version)

# Ingredients:

01 - 2 tablespoons fresh basil, chopped.
02 - 1½ cups mozzarella, shredded.
03 - ½ teaspoon red chili flakes.
04 - 3 cups canned diced tomatoes.
05 - 1 pound shredded rotisserie chicken.
06 - 8 ounces penne pasta.
07 - 1 cup parmesan, grated.
08 - 6 cups of chicken stock.
09 - A dash of salt and pepper.
10 - 1 large onion, diced.
11 - 3 teaspoons garlic, finely chopped.
12 - 1 tablespoon olive oil.
13 - 3 tablespoons tomato sauce.

# Instructions:

01 - Pour oil into a large pot over medium. Sauté chopped onions for 5 minutes till soft, then toss in garlic and cook it for 60 seconds.
02 - Mix in the tomato sauce, chili flakes, diced tomatoes, and stock. Let everything bubble gently. Toss in a pinch of salt and pepper.
03 - Put in the pasta. Stir here and there while cooking for about 9 minutes, so the pieces soften but stay firm.
04 - Add chicken, mozzarella, parmesan, and basil into the pot. Keep heating it all up until the cheese is gooey. Serve hot, garnished with more basil.
