Zesty Shrimp Tortilla Rolls (Print Version)

# Ingredients:

01 - 8 small flour tortillas, 6-inch size.
02 - 1 package Lime Cilantro Rice.
03 - 1 1/2 cups fresh tomato salsa.
04 - 2 tablespoons butter with salt (for cooking seafood).
05 - 1 pound shrimp, shelled and diced.
06 - 2 cloves crushed garlic.
07 - 1 teaspoon Cajun Spice Mix (for seafood).
08 - 4 tablespoons butter with salt (for making sauce).
09 - 4 tablespoons plain flour.
10 - 1 1/2 cups veggie stock.
11 - 1 teaspoon Cajun Spice Mix (for sauce mixture).
12 - 1 1/2 cups grated mozzarella, extra for topping.
13 - 1/2 cup green taco sauce.
14 - 1 cup tangy cream.

# Instructions:

01 - Heat your oven to 350°F. Give a 9x13 dish a spray. Cook the rice following the box tips.
02 - Throw diced shrimp in a pan with spices and garlic. Cook in butter just till they turn pink, about 2-3 mins.
03 - Start with butter and flour to make a paste, pour in stock and add spices. Mix in cheese, green sauce and tangy cream.
04 - Stir 1 cup of your sauce into the seafood mix.
05 - Stack rice, seafood blend and fresh salsa on each tortilla. Roll them up and put in your dish.
06 - Drizzle leftover sauce on top with extra cheese. Bake for 30-40 mins until it turns golden brown.

01 - You can fix all parts beforehand.
02 - Keep the shrimp a bit undercooked at first.
03 - Cool down for 5 mins after baking.
