Flaky Apple Pie (Print Version)

# Ingredients:

01 - Two pie crusts (store-bought or homemade).
02 - Ten cups of sliced apples (around 8 large ones).
03 - Half a cup of white sugar.
04 - A quarter cup of plain flour.
05 - One spoonful of fresh lemon juice.
06 - A teaspoon and a half of cinnamon.
07 - A pinch (1/4 teaspoon) of nutmeg and allspice.
08 - One egg mixed with a tablespoon of milk (to brush on top).
09 - Optional: Coarse sugar for sprinkling.

# Instructions:

01 - Stir apples with the sugar, toss in flour, lemon, and spices. You can heat it up for about 5 minutes if you'd like.
02 - Set your oven to 400°F. Spread one crust into a dish, fill it with cooled or slightly warm filling. Cut the second crust into strips, weave them like lattice on top, then pinch the edges. Brush with the egg mix and sprinkle with sugar if you want.
03 - Bake at 400°F for the first 25 minutes. Lower the heat to 375°F, cover the edges with a pie shield, and keep baking for an extra 35-40 minutes. Let it sit at room temp for about three hours before cutting into it.

# Notes:

01 - Good to make ahead.
02 - The inside needs to hit 200°F.
03 - Combine apple types for better flavor.
04 - Freezes nicely.
05 - Cooking the filling before helps avoid soggy crusts.
06 - Great addition to holiday tables.
