Easy Stuffed Zucchini Boats (Print Version)

# Ingredients:

01 - 1 pound ground beef, lean.
02 - 3 zucchini, medium-sized (around 6 ounces each).
03 - 1 garlic clove, finely chopped.
04 - 1 cup shredded mozzarella cheese.
05 - 1 diced onion.
06 - 2 teaspoons olive oil for brushing.
07 - 2 tablespoons grated Parmesan.
08 - 1/4 teaspoon ground black pepper.
09 - 1 and 1/2 cups marinara sauce, split.
10 - 2 teaspoons seasoning blend with Italian herbs.
11 - 1 chopped red bell pepper.

# Instructions:

01 - Set your oven to 400°F to warm up.
02 - Brown the beef with garlic and onions. Drain off grease, toss in bell pepper, and let it cook a couple of minutes. Pour in 1 cup of the sauce, stir in spices, and let it bubble gently for 10 minutes.
03 - Halve the zucchini lengthwise. Scoop the inside out, leaving a thick wall about 1/2 inch. Rub olive oil over them, sprinkle with pepper and a bit of salt to taste.
04 - Place zucchini halves into your baking dish. Load them with the meat mixture and add the rest of the marinara sauce over the top.
05 - Bake for an initial 15 minutes. Sprinkle cheeses on top, put it back in the oven for another 10 to 15 minutes.

# Notes:

01 - The zucchini you scoop out can go into the meat sauce or be saved for later meals.
02 - If the zucchini are larger, they might take additional baking time.
03 - Leftover chili or meat sauce can make a great substitute filling.
04 - You can get this ready to bake ahead of time.
