Easy Cozy Turkey Soup (Print Version)

# Ingredients:

01 - 1 tbsp butter.
02 - 1 tbsp olive oil.
03 - 1 large carrot.
04 - 2 celery stalks.
05 - 1 onion or 2 shallots.
06 - 1 garlic clove.
07 - 1/2 tsp dried thyme or 4 fresh sprigs.
08 - 6 cups chicken or turkey stock.
09 - 2 cups cooked chicken or turkey.
10 - 1/2 cup pearl couscous.
11 - 2 bay leaves.
12 - Salt and pepper, as much as you like.
13 - 1 tbsp chopped parsley.

# Instructions:

01 - Melt the butter and heat up the oil in a pot.
02 - Dice up the onion, carrot, celery, and garlic.
03 - With thyme, cook the veggies on low for around 5 minutes.
04 - Pour in the stock carefully.
05 - Toss in the turkey and bay leaves.
06 - Let it come to a rolling boil.
07 - Sprinkle in salt and pepper to your liking.
08 - Stir in the pearl couscous.
09 - Simmer for around 10 minutes until the couscous softens.
10 - Sprinkle on some fresh parsley.
11 - Enjoy it warm.

# Notes:

01 - Works well with both homemade or ready-made stock.
02 - Swap couscous for noodles, if you'd like.
03 - Perfect for using up leftovers like rotisserie chicken or holiday turkey.
