Sprinkle both sides of chicken with salt, pepper and garlic powder until evenly coated.

In your first bowl, stir flour with cornstarch. For the second bowl, mix egg, buttermilk and spicy sauce. Fill the third bowl with bread crumbs.

Roll chicken in the flour mix first, then dunk in buttermilk blend, and finally coat with crumbs. Pat firmly so crumbs stick well.

Pour oil in skillet and warm to medium. Fry chicken about 2-3 minutes each side until it hits 165 degrees inside. Don't crowd your pan.

Grab a small bowl and stir all bang bang sauce items together, then put aside.

Trim chicken to fit buns, stack on rolls, add mozzarella so it melts, then pour bang bang sauce over top.
