Creamy Shrimp Bake (Print Version)

# Ingredients:

01 - 1/2 cup grated Parmesan.
02 - 1 shallot, sliced super thin.
03 - 2 cups milk.
04 - 1 tablespoon olive oil (extra-virgin).
05 - 1/2 cup dry breadcrumbs.
06 - 2 tablespoons plain flour.
07 - 1 pinch of nutmeg, ground.
08 - 1 tablespoon fresh parsley, finely chopped.
09 - 1 cup Cheddar cheese, shredded.
10 - Salt as needed.
11 - 1 tablespoon butter.
12 - 4 teaspoons Italian seasoning, split into two portions.
13 - 30 medium raw shrimp, peeled and the veins removed.

# Instructions:

01 - Set your oven to 350°F (175°C) and let it heat up.
02 - Warm up the oil and butter in a skillet, stir in flour, and cook until it's pasty. Pour in milk slowly and let it thicken while simmering. Toss in some nutmeg and salt.
03 - In a casserole dish, layer your shrimp and give them a shake with 3 teaspoons of the Italian seasoning and some salt.
04 - Pour the sauce over the shrimp, then sprinkle with Cheddar, shallots, parsley, and the rest of the seasoning.
05 - Cover it all with breadcrumbs and a good layer of Parmesan.
06 - Pop the dish in and bake for about 25 minutes until the topping gets crunchy.

# Notes:

01 - Stick with uncooked shrimp for the best texture.
02 - Aim for a thick, velvety sauce.
03 - You can assemble this ahead—just leave off the topping until baking.
