Cook sausage with onion in a pan on medium heat until browned, then drain off any fat.

Transfer cooked meat mixture, chunked cream cheese, diced Velveeta and RoTel with juice to your crockpot.

Put the lid on and let it cook on LOW setting for 2 hours till everything's melted together, giving it a stir now and then.

Switch to the WARM setting and enjoy with tortilla chips.
