Coat a 9-inch springform pan thoroughly with butter or non-stick spray.

Combine cracker crumbs with melted butter and press firmly into the bottom and sides of the pan. Set in fridge for 45-60 minutes to set.

Using a hand or stand mixer, beat together the cream cheese, sugar, orange pieces, and vanilla until creamy and lump-free.

Gently fold in the whipped topping to the creamy mixture.

Pour the mix into the crust. Spread evenly with a spatula and freeze for no less than 4 hours.

Move to fridge for 30 minutes before serving. Add a topping of whipped cream and extra oranges as decoration.

Use a knife dipped in hot water to cut clean slices.
