Creamy Potato Chicken Dish (Print Version)

# Ingredients:

01 - 3 tbsp butter, unsalted.
02 - 8 ounces sliced mushrooms.
03 - 1 cup diced onions.
04 - 2 tbsp flour for thickening.
05 - 1 cup milk or cream.
06 - Black pepper, ground fresh.
07 - Table salt or kosher salt.
08 - 2 cups potatoes, already cooked and diced.
09 - 2 cups chicken, cooked and cut into chunks.
10 - 1 cup breadcrumbs, fresh (if wanted).
11 - 2 tbsp melted butter (if wanted).
12 - 1 cup grated cheddar or Monterey Jack (if wanted).

# Instructions:

01 - Set your oven to 350 F/180 C/Gas 4. Give a 2-quart baking dish a light coating of oil or butter.
02 - Melt butter in your skillet over medium flame. Toss in mushrooms with onions and cook until they're soft and golden, around 8 minutes.
03 - Sprinkle flour into the pan and stir for 1-2 minutes. Slowly pour in milk while stirring continuously until it gets thick, about 3-5 minutes. Add salt and pepper to your liking.
04 - Put your cooked potatoes and chicken in the greased dish, then pour the mushroom gravy over everything.
05 - Sprinkle your choice of topping - either breadcrumbs mixed with melted butter or a layer of shredded cheese.
06 - Pop in the oven for 25-30 minutes until it's bubbling and hot throughout.

# Notes:

01 - You can pick either cheese or buttery breadcrumbs for the top - both work great.
02 - This is a smart way to use up yesterday's chicken and potatoes.
