Perfect Herb Butter Turkey (Print Version)

# Ingredients:

01 - One turkey breast (around 2.5–3 kg), bone-in, skin intact.
02 - 1/2 tsp salt.
03 - Ground black pepper.
04 - 8 sprigs of sage.
05 - 4 rosemary sprigs.
06 - 10 sprigs of thyme.
07 - Twelve smashed garlic cloves.
08 - 150g of softened unsalted butter.
09 - 1 1/4 tsp salt to mix into butter.
10 - 1/2 tsp black pepper (to flavor butter).
11 - Crushed garlic cloves (4 large).
12 - 1 tbsp fresh rosemary, finely chopped.
13 - 1 tbsp parsley, chopped fine.
14 - A tablespoon of fresh sage, minced.
15 - Fresh thyme leaves (1 tbsp).

# Instructions:

01 - Take the turkey out of the fridge about 45 minutes before cooking. Heat your oven to 200C/390F.
02 - Arrange crushed garlic and herbs in the middle of a baking pan.
03 - Combine softened butter with minced garlic, salt, pepper, and chopped herbs in a bowl.
04 - Gently lift turkey skin with a spoon, spread two-thirds of the butter underneath. Rub the rest over the surface and underside.
05 - Set turkey on the herb bed. Drop oven temp to 180C/350F, roast for 1.5 hours, remember to baste every half hour.
06 - Keep it in the oven until it hits 74C/165F inside. Cover with foil once it looks golden brown.
07 - Let the turkey sit for 15–20 minutes. Slice up and pair with the butter sauce from the pan.

# Notes:

01 - You can prepare this up to one day ahead of time.
02 - Allocate roughly 15 minutes of cooking per 500g/1lb of turkey.
03 - Swap fresh herbs with dried if needed.
04 - Cut back on the salt if your turkey’s been brined.
